Spaghetti Squash, Spinach, Bacon, and Cheese…Low Carb and Delicious!

This recipe is one of my favorites…it’s easy and delicious!

Ingredients:

1 Spaghetti squash

1 package frozen chopped spinach, cooked

1 pound cooked, chopped bacon

1 cup shredded cheese of choice

low carb, healthy eating, spaghetti squash, bacon, spinach, shredded cheese

Low Carb Yum!

 

Cut the squash in half lengthwise, remove the seeds, spray or brush with olive oil, put cut side down on a cookie sheet and bake 35-40 minutes at 400 degrees.

When done, take out of the oven and flip them over so they can cool a bit.

Cut a pound of bacon into approximately 1″ squares and fry in a large frying pan.  Do NOT drain the bacon grease!

When you can handle the squashes without burning yourself, take a fork and dig out the strands of “spaghetti” into the pan with the bacon.

Add one package cooked chopped spinach and stir everything together until evenly distributed.

While still warm, top with lots of your favorite shredded cheese.  I especially like Swiss, but I also occasionally use mozzarella.

 

I adopted a low carb way of eating a couple of years ago.  My son is not really a fan, so this recipe will feed me at least 3 meals.  Usually dinner the first night, then reheated for lunch at work the next couple of days.
